Also known as hinn choi, een choy, or yin choi Edible Amaranth Red Stripe Leaf , Chinese Spinach , Amaranthus Tricolor . This heat lover is a very nutritious leaf vegetable. This variety has large, fleshy, pale-green or burgundy and green leaves that go well in salads. They can also be cooked quickly, faster than spinach. Plant in early summer in very warm soil and harvest by cutting young leaves which will re-grow.
