Benning's Green Tint pattypan squash (or scallopini squash) is a pretty little pale-green, almost white, elegant scallopini that grows on a tidy, productive bush. The excellent flavour is good raw with dips. Glowing bright white-green in your garden, these scalloped summer squash look like flying saucers (for tiny little aliens, anyway). Their unique shape results in a myriad of soft-edged forms when sliced up. Grown just like a zucchini, and picked when quite small, these tender-fleshed squash are a joy to grill, steam, or saute--or fry with a ray gun.
