Squash is typically separated into winter or summer types. Winter, also called vine types such as buttercup, butternut or acorn squash are harvested in the fall and store well during winter months. Summer squash, known as bush types or commonly referred to as 'zucchini', are harvested during the earlier summer months and best consumed when fresh. Although different in looks and taste, both have great flavour and are commonly used in stir fries, soups and baked.
